Tasting a Soulful Connection to the Land and History – Milpancho Molina y Tacos
Stationed in Guadalajara for a sumptuous two months, we were able to really snuggle into our delightful neighborhood of La Colonia Americana. Even given our generous timeline, we still couldn’t hit every promising looking restaurant in our area, there were just too many!
An embarrassment of riches for a couple of food lovers like us. So we had to go into triage mode and Milpancho Molino y Tacos was one of the spots that absolutely rose to the top of the priority list.
Milpancho is best classified as a taqueria, I guess, but it feels way more refined than that without being snooty at all. It is lovely to look at, decorated with care and has an honest-to-god working grain mill (molino) on site!
If you’re lucky, you can watch Guillermo grind the beautiful blue corn for the tortillas and other dishes right before your eyes (we were lucky).

Only a few seats inside, but we immensely enjoyed sitting on the small, wrought iron gated patio, watching the world go by as the kind and knowledgeable waitress Sophie plied us with all kinds of delicious food.
The tacos on the hand-milled blue corn tortillas are great of course, but don’t sleep on the blue corn tamale. The flavors change every so often, rayas y queso (peppers and cheese) on our visit, and it was sublime. As were the frijoles de olla – more like a soup, so comforting and satisfying. Dog friendly (like much of Guadalajara), our little guy got some tasty treats to enjoy and his own water bowl, courtesy of thoughtful Sophie.
We tried almost everything on the menu and there wasn’t a dud in the bunch. So yes, it is technically a taqueria, but of the deeply, soulful variety where you can taste the connection to the land and history.
