
Splendid Artisanal Pizza and So Much More – Pesto & Tomate Pizzeria
During the glorious 8 weeks we had in Guadalajara’s Colonia America neighborhood, earlier this year (2026) we were staying just down the street from this cute Italian place, Pesto y Tomate. Each day we passed by we were increasingly eager to try it after peeping so much beautiful food on the tables!
When the day finally arrived to try it for ourselves we sat on the pretty patio out front with our little dog. We had a direct view of the gorgeous tiled pizza oven – how’s that for ambiance? Definitely a good sign for tasty pizza to come!
We started with the baked panela cheese in chile morita appetizer served with flatbread. Wow. This dish was a revelation. Kind of reminiscent of fried halloumi with that same pleasing squeaky texture, but the (not too spicy, but very flavorful) morita chile just took it over the top! We have since tried to replicate this dish at home, but it’s just not the same as the original.


Whiskey Pepperoni Pizza: Mozzarella, pepperoni, cream cheese, fried leeks, and a light whiskey reduction
For pizza we sampled the whiskey pepperoni. This is a very well-made pie with a thin, cracker-like crust. The addition of the fried leeks offered a fun and unexpected flavor and texture.
A small but solid wine list and a few beers are on offer. Lucky for us there was a maracuyá (passionfruit) margarita as a special on the day we visited. We are maracuya devotees and this drink was fantastic! The seeds in the bottom are reminiscent of boba, if you’re into that (we are). Hopefully it becomes a regular feature on the menu.
Service is efficient, the setting and food are great. It’s a wonderful spot to sit outside and watch the world of Guadalajara go by while enjoying some fine Italian eats including the aforementioned pizzas, pasta dishes, and appetizers.
